Well, the new Pentax k-7 is magnesium sealed. I don't know how effective it is, and I don't like the limited Pentax lenses. However, it's got pretty good video capabilities which I do like (so you don't have to carry around a camcorder and a dslr)
Short of a DSLR, Canon's G10 is going to shoot some of the best pictures you can get. It's a little on the bulky side and doesn't have the ultra-zoom of some other compacts out there, but it goes a bit wider for some of those scenic shots (28mm) and gives you complete control over all shooting functions. It also shoots in RAW, if you want to spend a little extra time on your photos to get even better processing quality out of them.
I own a Leica D-Lux 4 it's an awesome little camera, but it's a bit pricey. Panasonic makes the same camera for about $300 less. The best part about both is they shoot in 720p HD video.
I'm a Canon guy and would agree with the recommendations of the G10 if it weren't for Canon's PowerShot S series. The specs are comparable to the G series but in a smaller package. They also make an underwater housing for the camera if you're so inclined.

For ultimate versatility - i would recommend a waterproof camera. The new Canon D10 combines the time-tested Digic chip as well as other options like shock absorption and shooting underwater. Comparable companies like Olympus and Pentax make good alternatives. I bring my Pentax W10 everywhere without worry about rain, the ocean, or dropping it
