Indoor karting is great for bachelor parties. It's competitive and a heckuva adrenaline rush.
Im about to get engaged and I think Ill have to do all three of those things for my bachelor weekend :)
Try a golf resort. Not sure where you live but there are great places all along the east coast (I'm from NY). Last year we went to Foxwoods and played a round of golf and then hit the casino. If gamblining is not your scene, there are other golf resorts around that will offer you rooms and multiple rounds of golf for a very resonable rate. Throw in a steak dinner one night and a poker game the other night and your weekend is set.
Combining what has been said earlier with a twist.
Whitewater Rafting is great "bro-tainment" and depending on where you live some rafting companies offer smaller rafts for a more thrilling ride [I've seen them referred to as "fire" or "sport rafts.]
You can typically load up some things in the guide's dry-bag, I recommend some nice cigar for the flat water.
If you call ahead and throw down a little extra scratch I'm certain the rafting company will let you "upgrade" your steaks if they provide a lunch at the middle of your trip or after you've been taken ashore.
After your excursion you should go camping. All of the rafting companies I've gone with offering camping in either tent sites or cabins. Rough it with a tent site and load up on as much booze as you can handle.

We went to go watch some boxing at Mandalay Bay. I suggest watching a UFC fight in Vegas.
Wolfed down some steaks at McCormick and Schmidts and at New York New York.
Shot an AK-47 on full-auto at the gun range at exploding targets.(This is especially nice because you can't do full-auto in California.)
Seriously, you can still go to Vegas without ever having the "stripper bachelor party." They literally have EVERYTHING you could possibly ever want to do within 30-1hr of Vegas. You could always stay at one of the resorts off the strop near Henderson or Lake Las Vegas. They cater to a different crowd, but you'll still have a great time. I've honestly experienced both sides of the spectrum in Vegas and had great memories at each. Choose the right company and no matter where you go will be great.
I also recommend camping. We rented a boat with a driver and went tubing for 2 hours and then went back to the campsite for beer and burgers. We all had an awesome time.
Paintball is a great time for a bachelor party. I use to be a ref at www.skirmish.com and we had tons of them. If you have a group of roughly 20 guys the paintball company will give you your own judges and let you do whatever you want as long as the goggles stay on.
You can combine camping with rock-climbing. Also, sailing (cruising) is sort of like camping on the water.
Go for a ride! I recently got married, and for my Bachelor party, we actually did a Bachelor Ride.
Motorcycles and sports cars. If you live in CA you're lucky. Northern CA, you're even more lucky.
We rode from Sonoma to Napa, up Hwy 29 to Hwy 128. That takes you all the way to the coast past Lake Sonoma and some crazy twisties through the mountains and out to Stewarts point. Then Hwy 1 South and stopped for oysters at a couple of places. We finished the loop back in Sonoma with dinner and drinks-AFTER the ride!
Everyone is still talking about how much fun it was!
My favorite bachelor party involved going to the horse races. Limo to the races, betting hard on the ponies, limo home, steak dinner then hitting a few bars.
Me and 8 other guys took my best friend on a 4 day cruise to Mexico. We had a stopover in Key West along the way, too and it was awesome! We relaxed, drank, gambled, and drank some more, and this was BEFORE we hit Cozumel! Good times were had, and there are still many stories we remember about the trip. As a bonus for us single guys, soon everybody on the ship found out who we were and why we were there, and it was like catnip for the ladies onboard!
Rent out a box at baseball game, or the other ideas that have been thrown out there are great also!
Deep Sea Fishing is always fun, and Charters are pretty good right now.
My Best man planned the most incredible party for me. To begin, we got together and hung out at his place. Then we went Disc Golfing followed by a trip to the movies for the opening of a big summer blockbuster. I forget what movie it was, but I will always remember going to get popcorn and coming back to the theater, which he had organized to give me a standing ovation when I came in. That's something I'll never forget. Another cool thing? he made a mix cd of songs to listen to in the car as we drove, and burned copies so that I and all of my groomsmen could take it home. Good clean fun.
I have planned a couple.
1. New Orleans - while it can be the stripper crazy time it doesn't have to be. They have great food, a casino and more great food.
2. A cruise - I just planned this and it is over a weekend departing on Friday and returning on Monday. Also, it is a very inexpensive option.
3. Bahamas - depending on where you live this can be an easy flight and relatively inexpensive.
4. Of course vegas - there is tons to do in vegas besides clubs, strippers and gambling. There are high speed go-carts, skydiving (both fake and real), paintballing etc. Oh, and great food.
Here's what I did: in the morning we did paintball at a local indoor cave course. It was basically us old guys vs. all these teen farts that play video games all day. Yeah, they kicked our asses. Then we went to a MMA fight at a club in town and the ring girls did a dance for the bachelor, very awesome and somewhat family friendly. Then we ended up at a campground park, built a fire, cooked steaks and drank lots of beer.

My husband and his buddies went to Key West for his bachelor party. They rented a condo and hung out at the pool and the beach; they also chartered a boat and went deep sea fishing. One guy caught a 7 foot sail fish and another caught a 10 pound tuna, which they had cooked at a local restaurant. It sounded like an awesome, unforgettable time. It's also a place where if a few guys want to do the stripper thing, they can without leaving the rest of the group with nothing to do.
A friend of mine had a brother living in LA, who organized a Hollywood tour & bar-crawl on an open-top double-decker bus.
Lots of fun, and we picked up batman & some stormtroopers from outside Mann's Chinese Theater.
Skydiving/mountain climbing/whitewater rafting/great white shark cage diving/anything that's too dangerous to do once you have a family.
