I'm a tall guy with a frustratingly large bottom. What are the best exercises to help burn fat off this area?
I agree that doing squats or any other exercises designed for only muscle building would not really help you accomplish this goal.
However if you go for a cardio work out that also helps to build muscle you have a pretty good shot at the results you want.
Try the rowing machine. This will help you build lean long muscles, and burn fat at the same time. Also Swimming, which will not help you burn as much fat but will build long lean muscle, instead of the shorter tighter muscles you get from heavy lifting.
A healthy balance of these two workouts, and your "Large" bottom will not only thin out, but you will feel better and your overall physique and endurance will sky rocket. But let's not forget about diet with these workouts. You do not have to cut everything out and be miserable, just remember your balance of protein and fiber, and enough carbs to give you the energy. Also make sure you have enough calories to carry the load.
A few months at this routine, and a solid diet, and you will feel and look better and after a year you will look and feel like you never have.
I know, I am 6'4" and did this exact thing. Never felt better.

As previously stated, spot reduction of fat is not possible.
The best thing you can do is clean up your diet. Stick to lean proteins, fresh fruits and vegetables, healthy fats like fish, olive oil, nuts and other legumes.
Cut out all the sugar you can. Avoid breads and other processed carbohydrates. Get your carbs from fruits and veggies. Drink only water.
Haven't seen anyone mention the importance of stretching (and yoga/pilates) for this sort of thing. No real danger of accidentally increasing the size of a muscle dramatically, reasonably aerobic, and much more likely to lengthen muscle than to increase its bulk.
low impact cardio and diet.
running, treadmills and any type of stair climber/elliptical should be avoided. Use a stationary bike. Do 45 minutes forst thing in the AM on an empty stomach, then eat every 2.3-3 hours. Small, frequent low fat meals.
The best way to get rid of a large bottom is high impact cardio specifically running. This will atrophy your ass and leg muscles.
Want proof? Have you ever seen a marathoner with a big ass? NONE.
Do donkey kicks and plenty of them. The more reps teh better. I also agree with the above poster that running long distance will help.

Swimming can be an great help to losing weight. http://freemensswimwear.com/Men_s_swimwear.html
The best way to get rid of a large bottom is to make it smaller, in relation to the rest of your body. Time to work on your shoulders, chest and upper back. As your upper body grows, your rear and legs will look smaller.
As a tall man, with an alarming tendency to store fat in my large butt (thank you, thank you..please hold your applause), I just want to encourgae you to find an anerobic excersize that works for you.
Something that you can enjoy and works up a good sweat for an hour or so. Mine has been mountain biking.
2 months of squats & leg presses matched along with a misguided belief that spot reduction works, and i ended up with muscle under the fat. Yeah, that looked just great.
Go team big butt!
Those who are suggesting that squats will simply develop muscle under your fat, while well-intended, are not exactly accurate. First and foremost, as most everyone has said - your diet is very important.
However in order to burn fat quickly and efficiently (and as others have said, you cannot spot-burn fat) you want to do multi-joint exercises that move weight over greater distances. This includes any exercises that use large, or large groups of muscles.
Also, be sure whether you're lifting or doing cardio that you keep your intensity HIGH and rest periods LOW. I highly recommend checking out Crossfit.com (don't worry, you can find scaled workouts for beginners and all the info you need on the left hand side under "start here!"), and High-Intensity Interval Training.
I began a six-week program using ONLY Tabata intervals (google it) and body-weight exercises (squats/jump-squats, push-ups, step-ups, etc) and my roommate lost 16lbs in the first 4 weeks.
Those recommending you avoid using large muscles or muscle groups should specify that rather than NOT use these muscles for fear of bulking up beneath your fat, you should instead use them in high intensity, low rest fashion.
Good luck!
The most important factor in leaning out is fixing your diet. Eat only slow digesting carbs throughout the day (sweet potato, wheat/whole grain bread, oatmeal) as opposed to fast digesting ones (white breads etc) However, curtail all carb intake later in the evening/night. When you eat dinner eat only things high in protein with vegetables. Secondly lift weights and do cardio immediately after lifting. This will assist in burning fat. Also for your weight lifting do compound exercises (things that use multiple muscles at once like the clean and press) or do supersets (do a set of bench and immediately go to something like rows) This will keep your heart rate high throughout the workout. Do not listen to those that said to avoid squats. Squats are some of the best testosterone enhancing exercises which will lead to fat loss. Hard work is the only thing that will get you to where you want to be!
Cheating. They will leave. On the other hand, I guess you mean your own large bottom... Then follow the other suggestions, they are good.

There is no way to burn fat off one area of the body. Aerobic exercise melts off fat pretty evenly throughout the body. If you do any muscle building exercises like squats you will build muscle there and make your rear look even bigger.
Stick to aerobics like running, jogging, or cycling.
